- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup homemade strawberry jam
- 2 cups fresh strawberries, sliced
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 cup fresh strawberries, pureed
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the bowl. Beat on medium speed for 2 minutes. Stir in the boiling water (the batter will be thin).
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then remove them to wire racks to cool completely.
- For the frosting, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and pureed strawberries, mixing until creamy.
- Once the cakes are completely cool, place one layer on a serving platter. Spread with strawberry jam and layer with sliced strawberries.
- Top with a second cake layer and repeat the jam and strawberries. Place the third layer on top.
- Frost the top and sides of the cake with the strawberry cream cheese frosting. Decorate with additional fresh strawberries if desired.
- Slice and serve!
Notes
Make sure all ingredients are at room temperature for the best texture. Store in the refrigerator for up to 5 days.
