Strawberry Earthquake Cake

A fun and delicious dessert with rich chocolate flavor and sweet strawberries.

Ingredients

  • 1 box of chocolate cake mix
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 cup of crushed strawberries (fresh or frozen)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, water, oil, and eggs. Mix until well combined.
  3. Gently fold in the crushed strawberries into the cake batter.
  4. Pour the batter into the prepared baking pan.
  5. In another bowl, beat the softened cream cheese and powdered sugar until smooth. Drop spoonfuls of the cream cheese mixture over the cake batter.
  6. Use a knife to swirl the cream cheese into the batter gently.
  7. Sprinkle shredded coconut and chopped nuts (if using) over the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before serving. Serve with whipped cream, if desired.

Notes

For best flavor, use fresh strawberries when in season. Adjust sweetness by modifying powdered sugar in the cream cheese mix.
