- 4 scoops strawberry ice cream
- 100g glutinous rice flour
- Cornstarch (for dusting, approx ½ cup)
Instructions
- Pour the ice cream in a medium-sized microwave-safe bowl. Heat at 30-second intervals until just melted.
- Add the glutinous rice flour to the melted ice cream and whisk until smooth.
- Cover the mochi mixture with plastic wrap and microwave for 2 minutes.
- After 2 minutes, stir the mixture with a spatula.
- Re-cover with plastic wrap and microwave for another 2 minutes, or until the mochi dough is no longer milky.
- Allow the mochi to cool to room temperature.
- Dust a clean surface with cornstarch, take small portions of the mochi dough, flatten it out, and place a scoop of strawberry ice cream in the center. Carefully fold the dough over the ice cream and pinch to seal.
- Sprinkle some extra cornstarch on top before serving to keep it from sticking together.
Notes
Ensure the ice cream is slightly softened for easier mixing. Try different flavors of ice cream for various mochi treats!
