- 2 cups strong brewed coffee, cooled
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 package vanilla wafers
- 2 tablespoons cocoa powder (for dusting) b
Instructions
- In a bowl, mix the brewed coffee, honey or maple syrup, and vanilla extract. Set aside.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- In another bowl, beat the mascarpone cheese until smooth, then gently fold in the whipped cream.
- Quickly dip each vanilla wafer into the coffee mixture and layer them in a dish.
- Spread half of the mascarpone mixture over the wafers.
- Repeat the layering process with the remaining wafers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust the top with cocoa powder.
