Vanilla Wafers Tiramisu

  • 2 cups strong brewed coffee, cooled
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 package vanilla wafers
  • 2 tablespoons cocoa powder (for dusting) b 

Instructions

  • In a bowl, mix the brewed coffee, honey or maple syrup, and vanilla extract. Set aside.
  • In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
  • In another bowl, beat the mascarpone cheese until smooth, then gently fold in the whipped cream.
  • Quickly dip each vanilla wafer into the coffee mixture and layer them in a dish.
  • Spread half of the mascarpone mixture over the wafers.
  • Repeat the layering process with the remaining wafers and mascarpone mixture.
  • Cover and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, dust the top with cocoa powder.
