Cheesy Cheddar Burrito

 

A rich and satisfying burrito loaded with melted cheddar cheese, seasoned filling, and fresh toppings, all wrapped in a warm, toasty tortilla!

Ingredients

  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup cooked and seasoned ground beef or a plant-based alternative
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

For the Cheddar Cheese Sauce:

  • 1 cup shredded cheddar cheese
  • ½ cup milk (or plant-based milk)
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ¼ tsp salt
  • ¼ tsp garlic powder

For the Burrito Assembly:

 

  • 4 large flour tortillas
  • ½ cup shredded cheddar cheese
  • ½ cup salsa
  • ½ cup shredded lettuce
  • ½ cup diced tomatoes

Instructions

  • Prepare the Filling: Heat olive oil in a pan over medium heat. Sauté onions and bell peppers until soft.

  • Add garlic, cumin, paprika, chili powder, salt, and black pepper. Stir well.

  • Mix in the cooked ground beef or plant-based protein, cooking for 3-5 minutes.

  • Stir in black beans and rice, then remove from heat.

  • Make the Cheddar Cheese Sauce:

    • In a small saucepan, melt butter over medium heat.
    • Stir in flour and cook for 1 minute. Slowly whisk in milk, stirring until thickened.
    • Add shredded cheddar cheese, salt, and garlic powder. Stir until smooth.
  • Assemble the Burrito:

    • Warm tortillas in a skillet or microwave.
    • Spread a spoonful of cheddar cheese sauce on each tortilla.
    • Add burrito filling, followed by extra shredded cheddar, salsa, lettuce, and tomatoes.
    • Roll tightly, tucking in the sides as you go.

 

  • Serve & Enjoy: Slice in half and serve with extra cheese sauce or your favorite dip!
