- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup cooked and seasoned ground beef or a plant-based alternative
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
For the Cheddar Cheese Sauce:
- 1 cup shredded cheddar cheese
- ½ cup milk (or plant-based milk)
- 1 tbsp butter
- 1 tbsp all-purpose flour
- ¼ tsp salt
- ¼ tsp garlic powder
For the Burrito Assembly:
- 4 large flour tortillas
- ½ cup shredded cheddar cheese
- ½ cup salsa
- ½ cup shredded lettuce
- ½ cup diced tomatoes
Instructions
Prepare the Filling: Heat olive oil in a pan over medium heat. Sauté onions and bell peppers until soft.
Add garlic, cumin, paprika, chili powder, salt, and black pepper. Stir well.
Mix in the cooked ground beef or plant-based protein, cooking for 3-5 minutes.
Stir in black beans and rice, then remove from heat.
Make the Cheddar Cheese Sauce:
- In a small saucepan, melt butter over medium heat.
- Stir in flour and cook for 1 minute. Slowly whisk in milk, stirring until thickened.
- Add shredded cheddar cheese, salt, and garlic powder. Stir until smooth.
Assemble the Burrito:
- Warm tortillas in a skillet or microwave.
- Spread a spoonful of cheddar cheese sauce on each tortilla.
- Add burrito filling, followed by extra shredded cheddar, salsa, lettuce, and tomatoes.
- Roll tightly, tucking in the sides as you go.
Serve & Enjoy: Slice in half and serve with extra cheese sauce or your favorite dip!
