- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- Mix the flour, sugar, baking powder, and salt together in a large bowl.
- Whisk together the milk, egg, melted butter, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if there are a few lumps.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter for each pancake onto the hot skillet.
- Cook until bubbles form on the surface of the pancake, about 2-3 minutes. Flip the pancake and cook for another 2 minutes until golden brown.
- Remove from the skillet and keep warm. Repeat with the remaining batter.
Notes
Make sure not to over-mix the batter. A few lumps are okay. Store leftovers in an airtight container in the fridge for up to 3 days.
