Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the flour, sugar, baking powder, and salt together in a large bowl.
  2. Whisk together the milk, egg, melted butter, and vanilla extract in another bowl.
  3. Pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if there are a few lumps.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter for each pancake onto the hot skillet.
  6. Cook until bubbles form on the surface of the pancake, about 2-3 minutes. Flip the pancake and cook for another 2 minutes until golden brown.
  7. Remove from the skillet and keep warm. Repeat with the remaining batter.

Notes

Make sure not to over-mix the batter. A few lumps are okay. Store leftovers in an airtight container in the fridge for up to 3 days.
