For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- 6 tablespoons unsalted butter, melted
For the Filling:
- 16 oz cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix the graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes, then cool.
- In a bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
- Pour the filling over the crust and smooth the top.
- Bake for 45–50 minutes until the center is set but slightly jiggly. Turn off the oven and let it cool inside with the door slightly open for an hour.
- Refrigerate for at least 4 hours before serving.
