For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

Instructions

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • Mix the graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 10 minutes, then cool.
  • In a bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream.
  • Pour the filling over the crust and smooth the top.
  • Bake for 45–50 minutes until the center is set but slightly jiggly. Turn off the oven and let it cool inside with the door slightly open for an hour.
  • Refrigerate for at least 4 hours before serving.
