- 2 ripe bananas, mashed
- 1/2 cup melted butter
- 1 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
- Mash the ripe bananas in a mixing bowl.
- Mix in the melted butter.
- Stir in the sugar, beaten egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and stir until just combined.
- Fold in the chocolate chips and walnuts, if using.
- Divide the batter evenly into the muffin tin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
Notes
Serve the muffins warm or at room temperature. They can be enjoyed alone or with butter, cream cheese, or even ice cream.
