- 2 cups mixed salad greens
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios
- 1/4 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash the mixed salad greens and dry them thoroughly. Place them in a large salad bowl.
- Combine the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper in a separate bowl. Whisk until the dressing is smooth and well blended.
- Add the fresh blueberries, shelled pistachios, crumbled feta, and sliced red onion to the salad greens.
- Drizzle the dressing over the top and gently toss the salad until everything is well coated.
Notes
Serve chilled or at room temperature. Best if the dressing is kept separate until serving.
