Carrot Cake Loaf

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
  3. Mix together oil, sugar, eggs, and vanilla in another bowl until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Top with cream cheese frosting before serving.

Notes

To store, wrap it tightly in plastic wrap or aluminum foil. Keeps at room temperature for 3 days or in the fridge for up to a week.
