- 1 1/2 cups all-purpose flour

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- Cream cheese frosting for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a large mixing bowl.
- Mix together oil, sugar, eggs, and vanilla in another bowl until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the grated carrots and walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Top with cream cheese frosting before serving.
Notes
To store, wrap it tightly in plastic wrap or aluminum foil. Keeps at room temperature for 3 days or in the fridge for up to a week.
