Instructions
- Preheat the oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or oil.
- Whisk together the eggs, cottage cheese, salt, and pepper until well combined.
- Stir in the shredded cheese and diced vegetables.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Let cool slightly before removing from the muffin tin.
- Serve warm or store in the refrigerator for meal prep.
Notes
These egg bites can be customized with different vegetables, cheeses, and herbs or spices. Store leftovers in an airtight container in the refrigerator for 3-5 days or freeze for longer storage.
