- 2 chicken breasts
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup fresh vegetables (e.g. bell peppers, corn, onions)
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Smoky spices (e.g. cumin, paprika, chili powder)
- Salt and pepper to taste
Instructions
- Season the chicken breasts with smoky spices, salt, and pepper.
- Grill the chicken over medium heat until cooked through, approximately 6-7 minutes per side.
- Once grilled, slice the chicken into strips.
- In a large tortilla, layer the cooked rice, black beans, fresh vegetables, grilled chicken, and drizzle with chipotle ranch dressing.
- Roll the tortilla tightly to wrap the ingredients.
- Optionally, toast the burrito on the grill or in a pan for a few minutes on each side until golden brown.
- Serve warm.
Notes
Use leftover chicken or rotisserie chicken to save time. Adjust the amount of chipotle ranch dressing according to your spice preference.
