Chocolate Chip Banana Oatmeal Cookies

Delightful cookies combining ripe bananas, rich chocolate, and hearty oats, perfect for snacks or breakfast.

  • Total Time: 25 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 2 large ripe bananas, mashed (approx 3/4 cup mashed)
  • 1/2 cup almond butter (can sub peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups rolled oats (gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the mashed bananas, almond butter, maple syrup, and vanilla together in a mixing bowl.
  3. Combine the oats, salt, cinnamon, chocolate chips, and walnuts in a separate bowl.
  4. Add the wet ingredients to the dry ingredients and mix until combined.
  5. Use a cookie scoop to place the cookie dough on the baking sheet. Gently press down on each cookie to flatten it slightly.
  6. Bake for 12-15 minutes until the edges are golden brown.

Notes

Use ripe bananas for the best flavor and sweetness. Substitute almond butter with any nut or seed butter. For softer cookies, remove from oven as soon as they start to turn golden.
