Creamy Chicken and Gnocchi

  • 2 tablespoons olive oil or sundried tomato oil from the can
  • 1 pound chicken breast, cut into ¾1 inch pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • ⅓ cup sundried tomatoes, chopped
  • ½ cup grated parmesan cheese
  • 2 cups baby spinach leaves

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add butter and minced garlic to the skillet and sauté for another minute.
  4. Pour in the chicken stock and heavy cream, stirring to combine.
  5. Add the gnocchi, smoked paprika, sundried tomatoes, and baby spinach. Cook until the gnocchi is tender and the spinach has wilted, about 5-7 minutes.
  6. Stir in the grated parmesan cheese until melted and well combined.
  7. Serve hot and enjoy your creamy chicken and gnocchi!

Notes

This dish goes well with a side salad or some crusty bread to soak up the delicious sauce. You can also sprinkle extra parmesan cheese on top for added flavor.
