- 2 tablespoons olive oil or sundried tomato oil from the can
- 1 pound chicken breast, cut into ¾ – 1 inch pieces
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup chicken stock
- 1 cup heavy cream
- 16 ounces gnocchi
- 1 teaspoon smoked paprika
- ⅓ cup sundried tomatoes, chopped
- ½ cup grated parmesan cheese
- 2 cups baby spinach leaves
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken pieces and season with Italian seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add butter and minced garlic to the skillet and sauté for another minute.
- Pour in the chicken stock and heavy cream, stirring to combine.
- Add the gnocchi, smoked paprika, sundried tomatoes, and baby spinach. Cook until the gnocchi is tender and the spinach has wilted, about 5-7 minutes.
- Stir in the grated parmesan cheese until melted and well combined.
- Serve hot and enjoy your creamy chicken and gnocchi!
Notes
This dish goes well with a side salad or some crusty bread to soak up the delicious sauce. You can also sprinkle extra parmesan cheese on top for added flavor.
