Ingredients

  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup chicken broth
  • 2 cups uncooked rice
  • 2 teaspoons cajun seasoning
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Combine the chicken, sausage, onion, bell pepper, celery, and garlic in a Crock Pot.
  2. Add the diced tomatoes, chicken broth, uncooked rice, cajun seasoning, salt, and pepper. Stir well to combine.
  3. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the rice is tender and the chicken is cooked through.
  4. Garnish with sliced green onions before serving.

Notes

Use good quality smoked sausage for the best flavor. Customize the Cajun seasoning to your preference and consider adding vegetables like okra or corn.
