- 1 cup of strong brewed coffee, cooled
- 2 tablespoons of coffee liqueur (optional)
- 1 cup of mascarpone cheese
- 1 cup of heavy cream
- ½ cup of sugar
- 1 teaspoon of vanilla extract
- 18–20 ladyfinger cookies
- Unsweetened cocoa powder, for dusting
Instructions
- Combine the cooled brewed coffee and coffee liqueur (if using) to prepare your coffee dip.
- Whip the heavy cream until soft peaks form.
- Mix the mascarpone cheese, sugar, and vanilla extract until smooth.
- Fold the whipped cream into the mascarpone mixture until well combined.
- Dip each ladyfinger in the coffee mixture for about a second, making sure not to soak them.
- Arrange half of the dipped ladyfingers in a single layer in an 8×8 inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add another layer of dipped ladyfingers on top, followed by the remaining mascarpone mixture.
- Smooth the top and cover the dish with plastic wrap.
- Freeze for at least 240 minutes or until completely firm.
- Dust with cocoa powder before serving and cut into small squares or use a cookie cutter for fun shapes.
Notes
Use strong brewed coffee for deeper flavor. Don’t over-soak the ladyfingers in the coffee to avoid mushiness. You can use store-bought whipped cream to save time.
