- 1 cup salted butter (cut into cubes)
- 1 cup granulated sugar
- 1 whole egg
- 1/2 teaspoon vanilla extract

- 2 teaspoons baking powder
- 3 cups all-purpose flour
- 1/2 cup salted butter (at room temperature)
- 8 ounces cream cheese (at room temperature)
- 1 pound powdered sugar
- 1 teaspoon vanilla extract
- Fresh fruit: berries, kiwi, banana, mandarin oranges, etc.
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, cream together the cubed salted butter and granulated sugar. Add the egg, vanilla extract, and almond extract. Mix until smooth.
- Gradually add the baking powder and flour, mixing until the dough forms. Scoop tablespoon-sized amounts of dough onto a baking sheet and flatten slightly.
- Bake for 10-12 minutes or until lightly golden. Allow the cookies to cool completely.
- Beat together the room temperature butter and cream cheese in a mixing bowl until smooth. Gradually add the powdered sugar and 1 teaspoon of vanilla extract. Continue mixing until the frosting is fluffy.
- Once the cookies are cooled, spread a layer of frosting on each cookie. Arrange your choice of fresh fruit on top for decoration.
Notes
Make sure your ingredients are at room temperature for a smooth frosting. Experiment with different seasonal fruits.
