Lemon Crumb Bars

Ingredients

  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. Mix flour, powdered sugar, butter, and salt in a medium bowl until crumbly. Press the mixture into the bottom of the prepared dish to form a crust.
  3. Bake for 15-20 minutes until lightly golden.
  4. Whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder in a separate bowl. Pour over the baked crust.
  5. Bake for an additional 20-25 minutes until set.
  6. Allow to cool, then dust with powdered sugar before cutting into squares.

Notes

For best flavor, use fresh lemons for juice and zest. Don’t overbake; bars should be set but slightly soft in the center.
