Lemon Tiramisu

A refreshing twist on the classic tiramisu featuring zesty lemon and creamy mascarpone.

Ingredients

  • 1 cup lemon curd (store-bought or homemade)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 to 16 ladyfinger cookies
  • Zest of 1 lemon
  • Fresh mint leaves (for garnish)

Instructions

  1. Combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a mixing bowl. Whip until smooth and thick.
  2. Fold in the lemon curd gently until combined.
  3. Prepare a mixture of lemon juice and a bit of water in a shallow dish to soak the ladyfingers.
  4. Dip each ladyfinger quickly into the lemon juice mixture and layer them in the bottom of your serving dish.
  5. Spread half of the lemon mascarpone mixture over the ladyfingers.
  6. Add another layer of dipped ladyfingers on top.
  7. Finish by spreading the remaining lemon mascarpone mixture over the top.
  8. Cover and refrigerate for at least 240 minutes or overnight.
  9. Garnish with lemon zest and fresh mint leaves before serving.

Notes

Use fresh lemon juice for best flavor. Store leftovers in an airtight container for 2-3 days.
