- 1 cup lemon curd (store-bought or homemade)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 12 to 16 ladyfinger cookies
- Zest of 1 lemon
- Fresh mint leaves (for garnish)
Instructions
- Combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a mixing bowl. Whip until smooth and thick.
- Fold in the lemon curd gently until combined.
- Prepare a mixture of lemon juice and a bit of water in a shallow dish to soak the ladyfingers.
- Dip each ladyfinger quickly into the lemon juice mixture and layer them in the bottom of your serving dish.
- Spread half of the lemon mascarpone mixture over the ladyfingers.
- Add another layer of dipped ladyfingers on top.
- Finish by spreading the remaining lemon mascarpone mixture over the top.
- Cover and refrigerate for at least 240 minutes or overnight.
- Garnish with lemon zest and fresh mint leaves before serving.
Notes
Use fresh lemon juice for best flavor. Store leftovers in an airtight container for 2-3 days.
