- 2 pounds of potatoes
- ½ cup sour cream
- ½ cup mayonnaise
- 1 cup cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 4 scallions, sliced
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot until tender, then drain and let cool.
- In a large bowl, mix sour cream and mayonnaise to create the dressing.
- Chop the cooled potatoes into bite-sized pieces and add to the bowl.
- Gently mix in bacon, cheddar cheese, and scallions.
- Season with salt and pepper as needed.
- Chill in the refrigerator for at least 60 minutes before serving.
Notes
For extra flavor, try using flavored mayonnaise or add a bit of mustard to the dressing. Ensure potatoes are completely cooled before mixing.
