Mixed Vegetable Koftas

Ingredients

  • 1 cup mixed vegetables (carrots, peas, potatoes)
  • 1/2 cup gram flour (besan)
  • 1 onion, finely chopped
  • 23 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander, chopped
  • Oil for frying

Instructions

  1. Mash the mixed vegetables in a bowl.
  2. Add the gram flour, onion, green chilies, ginger-garlic paste, cumin seeds, red chili powder, turmeric powder, salt, and fresh coriander.
  3. Mix until well combined.
  4. Shape the mixture into small balls (koftas).
  5. Heat oil in a pan and fry the koftas until golden brown on all sides.
  6. Serve hot as a snack or with a side dish.

Notes

Store leftover koftas in an airtight container in the refrigerator for up to 2-3 days. Reheat in the oven or skillet to regain crispiness.
