Ingredients

- 1 cup mixed vegetables (carrots, peas, potatoes)
- 1/2 cup gram flour (besan)
- 1 onion, finely chopped
- 2–3 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander, chopped
- Oil for frying
Instructions
- Mash the mixed vegetables in a bowl.
- Add the gram flour, onion, green chilies, ginger-garlic paste, cumin seeds, red chili powder, turmeric powder, salt, and fresh coriander.
- Mix until well combined.
- Shape the mixture into small balls (koftas).
- Heat oil in a pan and fry the koftas until golden brown on all sides.
- Serve hot as a snack or with a side dish.
Notes
Store leftover koftas in an airtight container in the refrigerator for up to 2-3 days. Reheat in the oven or skillet to regain crispiness.
