- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger biscuits
- 1 cup fresh raspberries
- Cocoa powder, for dusting
Instructions
- Combine cooled coffee and coffee liqueur in a shallow dish.
- Beat mascarpone, heavy cream, sugar, and vanilla in a large bowl until soft peaks form.
- Dip ladyfingers quickly into the coffee mixture and lay them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add a layer of raspberries.
- Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
- Cover and refrigerate for at least 240 minutes, preferably overnight.
- Dust with cocoa powder before serving and garnish with extra raspberries.
Notes
Serve chilled for best texture. Best enjoyed within 2-3 days for optimal freshness.
