Raspberry Tiramisu

Ingredients

  • 1 cup strong brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger biscuits
  • 1 cup fresh raspberries
  • Cocoa powder, for dusting

Instructions

  1. Combine cooled coffee and coffee liqueur in a shallow dish.
  2. Beat mascarpone, heavy cream, sugar, and vanilla in a large bowl until soft peaks form.
  3. Dip ladyfingers quickly into the coffee mixture and lay them in a dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add a layer of raspberries.
  6. Repeat the layers with remaining ladyfingers, mascarpone mixture, and raspberries.
  7. Cover and refrigerate for at least 240 minutes, preferably overnight.
  8. Dust with cocoa powder before serving and garnish with extra raspberries.

Notes

Serve chilled for best texture. Best enjoyed within 2-3 days for optimal freshness.
