- 1 ripe avocado
- 2 slices of bread (your choice)
- Fresh strawberries, sliced
- Optional: lemon juice, red pepper flakes
Instructions
- Beat the eggs with salt and pepper in a bowl.
- Heat butter or oil in a non-stick skillet over medium heat.
- Pour in the eggs and gently stir until just set; remove from heat.
- Toast the bread.
- Mash the avocado and spread it on the toasted bread, adding lemon juice and red pepper flakes if desired.
- Top with sliced strawberries.
- Serve scrambled eggs on the side or on top of the toast.
Notes
For creamier scrambled eggs, add a splash of milk or cream when beating the eggs. Use a ripe avocado for the best flavor and texture.
