Spinach and Feta Pinwheels

Ingredients

  • 1 cup fresh spinach
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped sun-dried tomatoes
  • 1 package of puff pastry or tortilla wraps
  • Salt and pepper to taste
  • Olive oil (optional, for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C) if using puff pastry.
  2. In a bowl, mix together the spinach, feta cheese, cream cheese, sun-dried tomatoes, salt, and pepper until well combined.
  3. If using puff pastry, roll out the pastry sheet and spread the filling evenly. If using tortilla wraps, spread the filling over the entire surface of the tortilla.
  4. Roll the pastry or tortilla tightly into a log shape.
  5. If using puff pastry, cut into 1-inch pieces and place on a baking sheet lined with parchment paper. Brush with olive oil if desired. If using tortillas, slice into pinwheels.
  6. Bake for 15-20 minutes or until golden brown if using puff pastry, or arrange on a platter if using tortillas.
  7. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat to maintain crispiness.
