- 1 1/2 cups all-purpose flour

- 1/4 cup fresh lemon juice

- 1 cup powdered sugar (for icing)
- 2 tablespoons fresh lemon juice (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk, lemon juice, and lemon zest.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together powdered sugar and lemon juice for the icing until smooth and drizzle over the cooled loaf.
Notes
Store wrapped in plastic wrap or foil. It can be kept at room temperature for up to three days or in the refrigerator for up to one week. For longer storage, freeze for about two months.
