- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/3 cup milk
- Blue food coloring (as desired)
- 1 cup whipped cream
- 1/2 cup crushed pineapple (drained)
- 1/2 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 15×10 inch jelly roll pan with parchment paper.
- Mix the flour, baking powder, and salt together in a bowl. Set aside.
- Whisk the eggs and sugar until fluffy in another large bowl. Add the vegetable oil, vanilla extract, and milk. Mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Add blue food coloring until you achieve the desired shade of blue.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake for 12-15 minutes, or until the cake springs back when touched.
- Remove the pan from the oven and let it cool for a few minutes.
- Invert the cake onto a clean kitchen towel sprinkled with powdered sugar, gently peeling off the parchment paper.
- Spread whipped cream mixed with crushed pineapple and shredded coconut over the cake.
- Roll the cake tightly with the towel from one end to the other.
- Wrap the rolled cake in plastic wrap and refrigerate for at least an hour before serving.
- Slice and serve once chilled!
Notes
Serve with extra whipped cream or fresh fruit on the side for an even more delicious presentation.
