Ingredients
Scale
- 1 pound chicken tenders
- 1 teaspoon chili powder
- 1 cup sweetened coconut flakes
- 1 cup panko breadcrumbs
- Salt and pepper to taste
- Oil for frying (optional) or cooking spray (for baking)
Instructions
- Preheat your oven to 400°F (if baking) or heat oil in a frying pan (if frying).
- Season chicken tenders with chili powder, salt, and pepper.
- Place coconut flakes in one bowl and panko breadcrumbs in another bowl.
- Dip each chicken tender first in coconut flakes, then in panko breadcrumbs, ensuring they are evenly coated.
- If frying, cook the tenders in hot oil for about 4-5 minutes on each side until golden brown. If baking, place the tenders on a greased baking sheet and bake for about 20-25 minutes, flipping halfway through, until golden and cooked through.
- Serve with your favorite dipping sauce.
Notes
Make sure to coat the chicken tenders well with coconut and panko for a crispy texture. Optionally, add more chili powder for a spicier kick.
