- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup sugar
- 1/2 cup milk
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/3 cup flour
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes in a large pot until tender. Drain and mash in a large bowl.
- Add sugar, milk, butter, eggs, vanilla, and salt to the mashed sweet potatoes. Mix until smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, combine chopped pecans, brown sugar, and flour. Mix well.
- Sprinkle the pecan topping evenly over the sweet potato mixture.
- Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.
Notes
For a smoother mash, use a potato ricer. Enhance the flavor with a pinch of cinnamon or nutmeg.
