Sweet Potato Casserole with Pecan Topping

Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/3 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender. Drain and mash in a large bowl.
  3. Add sugar, milk, butter, eggs, vanilla, and salt to the mashed sweet potatoes. Mix until smooth.
  4. Pour the sweet potato mixture into a greased baking dish.
  5. In a separate bowl, combine chopped pecans, brown sugar, and flour. Mix well.
  6. Sprinkle the pecan topping evenly over the sweet potato mixture.
  7. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.

Notes

For a smoother mash, use a potato ricer. Enhance the flavor with a pinch of cinnamon or nutmeg.
