Ingredients

  • 1 lb Velveeta cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon taco seasoning
  • Optional: chopped fresh cilantro, for garnish

Instructions

  1. Cut the Velveeta cheese into small cubes for easier melting.
  2. In a medium pot, combine the Velveeta cheese and the diced tomatoes with green chilies.
  3. Place the pot on low heat. Stir frequently until the cheese is melted and everything is well mixed.
  4. Add the black beans and taco seasoning. Stir until combined, letting it heat through for about 5 more minutes.
  5. Serve warm, and garnish with fresh cilantro if desired.

Notes

Use low-fat Velveeta for a lighter dip. For extra spice, add jalapeños or hot sauce. Make it in the slow cooker for a party-sized portion.
