- 2 cups Watermelon
- 1 cup Tapioca starch
- 1 cup Water
- 1/2 cup Sugar
- Food coloring (optional)
- 2 tbsp Lemon juice
Instructions
- Blend the watermelon and strain it to get the juice.
- Mix the watermelon juice with sugar and lemon juice in a saucepan over medium heat.
- Gradually add tapioca starch while stirring to avoid lumps.
- Once the mixture thickens, pour it into a mold and let it cool.
- Cut the cooled mixture into small pieces and roll them into balls.
- Chill the watermelon boba in the fridge and serve it in drinks.
Notes
Strain the watermelon juice well to avoid pulp. Adjust the sugar according to taste. Store in an airtight container in the fridge.
